Sounds ignition related to me, but I'm not the brightest bulb on the tree here. I'd check the most obvious first: plugs, plug wires and caps, and carbs too. Not sure on the ignition set-up (pretty sure it's electronic/no points) but there's some peeps here with more brains than I so someone will add to the list for you. Welcome to the place BTW.

also drain the crank case breather overflow bottle. 1100 wings do have electronic ignitions so you could have a bad cdi box / pulse generator

If it was a 1500 I would check the fuel filter first. Check the easy stuff first.

What does the bike do on hard acceleration? If it stumbles, you probably have a bad fuel filter.

Do the carbs sit in rubber boots ? I'd bet the boots are cracked and
air is leaking in causing a lean condition. We see that a lot with
gray market import bikes from Japan. i.e. VFR 400 etc. IF the boots
are more than about 15 years old they are suspect.

A fix is new boots or as one local here uses liquid India Rubber. Coat
the old boot and let dry. Reinstall and go.
