The bike runs flawlessly, but the problem is with the transmission. It will go grinding into first gear, engage, then slip back out into neutral under power. The clutch cable is nearly impossible to pull in, extremely tight, almost frozen. I can shift into second and roll out just fine. Could the clutch cable be the issue here or am I looking at something more serious? Any help would be greatly appreciated!!

The clutch cable is a good place to start. Replace it and adjust clutch & see what happens. If that doesen't solve your problem then I thinking a bent shifter fork or worn dogs on first gear which means major transmission work for you or the shop. Thats just my to cents.
